First off, hello Calvin_0 long time no see eh? :)OK, Bhatooth got it right, it's the fish the eggs come from, plus the preparation. Unlike what we're used to, to quote wikipedia:
wikipediaCaviar is the processed, salted roe of certain species of fish, most notably the sturgeon (black caviar) and the salmon (red caviar). It is commercially marketed worldwide as a delicacy and is eaten as a garnish or a spread; for example, with hors d'œuvres.
Roe by the way is:
wikipediaRoe or hard roe is the fully ripe internal ovaries or egg masses of fish and certain marine animals, such as shrimp, scallop and sea urchins. As a seafood, roe is used both as a cooked ingredient in many dishes and as a raw ingredient.

Looking at caviar creeps me out. It reminds me of the ovaries of a pregnant frog I had to dissect for school. DO NOT WANT. : (
